I have already mentioned in one of my previous blogs about my crazy love for Omlettes (Stuffed Mushroom Omelette). But, what I have not mentioned is that, my love for egg is not confined to omlette. Also, in my family, the love for egg is not confined to me. Yes, the craziness for egg in any form runs in the family. Hence, it is very obvious that egg is a regular feature at our breakfast table, and different recipe experiments with this versatile creature called egg are not uncommon.
Also, if I have to be really honest, compared to any other ingredients, I am somehow more comfortable in experimenting with eggs. The reason can be multiple. I love eggs, my family loves eggs and egg is generally available at home being it anytime of the day or any time of the year. But, more than anything, deep inside me I somehow have a strong belief that I won’t go wrong with recipes where the key ingredient is egg. Behind this, I don’t think there is any mysterious connection between me and eggs. But, I think it has more to do with the unique charisma of egg. Which is the reason it is loved by the entire world and is unanimously considered as super food.
One such successful experiment which has strengthened my above mentioned belief is Cheese Egg Bhurji for breakfast. Cheese Egg Bhurji is nothing but scrambled egg with cheese. There is no prize for guessing that the day I made it for the first time, the dish became an instant hit with the family, not only because of its ever satisfying taste but also for the convenience. Like any other Egg Bhurji or Scrambled Egg recipe, this recipe is easy, quick and obviously healthy. The dish is so versatile that you can have it with bread, chapatti or even with rice & dal. Thus, the dish becomes a quick savior for breakfast as well as lunch and dinner.
Another good part of this dish is, you can tweak the dish with any vegetable or spices available at home, the dish will still taste heavenly.
Deviating from the usual Egg Bhurji recipe that we usually make at home, this recipe uses good amount of cheese and butter to allow some change to your taste-buds. Although in this Cheese Egg Bhurji Recipe, I have limited my usage of vegetables and spices. But, you can use any vegetable or spices to give a twist and trust me this, will still taste delicious.
So, let’s pull our sleeves together for another masterpiece, created with everyday ingredients.
Recipe: Cheese Egg Bhurji or Scrambled Egg With Cheese
Preparation Time: Around 5 minutes (includes chopping onion and tomato) Cooking Time: Around 19 minutes (on low flame) Yield: Serves 3 Equipment used: A pan and a turner
Ingredients:
- 6 Eggs
- 1 onion chopped
- 1 tomato chopped
- Around ¼ teaspoon salt
- 2 tablespoon molten cheese
- 1 tablespoon butter
- 2 tablespoon vegetable oil
- Oregano flakes (optional)
Method:
- Beat the eggs in a mixing bowl and keep it aside
- Chop onion and tomato and keep them aside
- Heat a pan and add oil into the pan
- Add chopped onion when the oil is hot
- When the onion turns golden brown or turns slightly translucent, add the chopped tomato
- Once the tomato pieces are tender, add the beaten eggs while stirring continuously
- Add salt when the eggs are scrambled or cooked
- Add butter and cheese and remove the pan from heat
- Sprinkle Oregano flakes
Beat eggs in a bowl and keep it aside.
Chop onion and tomato.
Heat oil in a pan.
Fry onion.
Add tomato once the onion turns golden brown.
Add beaten eggs once the tomato pieces are tender.
Add salt, cheese and butter once the eggs are cooked.
Remove from heat and sprinkle oregano flakes.
Tips:
- I have used molten cheese as I had cheese spread at home. You can also use grated cheese for this recipe
- You may use electronic hand blender to beat the eggs to get the perfect texture
- In case of non stick pan, heat the pan on low flame
- Don’t stop stirring once the eggs are added in the pan till they are cooked
