Boredom! I am sure everyone has their own interpretation and their own way to define boredom. For me it is an alarm or a sign of warning from my brain, when the mind is extremely tired owing to repetition and predictability of outcome for any action or anything.
But, on the contrary to the general negative connotation attached to boredom, have you ever wondered how important boredom is for us? Have you ever wondered what would have happened if there was no boredom in life and how blessed we are, that we have the ability to get bored?
In the current scenario, as the world is engulfed by this strange Covid 19 Virus, the true blessings of boredom can be realised. When countless number of people are confined to their home with much time to kill, it is no surprise that the internet and Social Media is flooded with so many stories of successful start-ups and innovative business ideas. Hence, it is true that being bored is painful, but it is also true that boredom motivates us to look for alternatives, by hinting the fact that the current situation lacks something and we need to push forward. It is boredom along with few other key emotions that prevent us from remaining trapped in unfulfilling situations and eventually missing out on most rewarding experiences that are waiting for us to embrace. And I am sure if not all, atleast most of us once in our life have gone though the extreme painful state of boredom, just to come out of it being happier and more content.
Similarly, the story of boredom equally prevails when it comes to food, with one kind of taste, one kind of cuisine or one kind of cooking technique. For me it is dreadful to almost imagine the taste of the dish owing to repetition, even before attempting the same. This what exactly happened last week, when I had to cook chicken curry. And thus, born out of boredom was this ‘Garlicky Buttery Chicken Breast Curry’.
This ‘Garlicky Buttery Chicken Breast Curry’ (as I named it), is a no thought, extremely easy to cook dish and requires least preparation. While simple at its core, when served on plate, this dish looks magnificent for its flavour and taste.

Recipe: Garlicky Buttery Chicken Breast Curry Recipe
Preparation Time: Around 15 minutes Cooking Time: Around 1 hour 20 minutes Equipment Used: Knife, Peeler, Cutting Board, Bowls, Wok, Indian Spatula, Grater Yield: Serves 6-7
Ingredients:
- 1 kg chicken breast pieces
- 1 garlic or 25 cloves of garlic
- 2 carrots
- 2 bell peppers
- 1 tomato
- 1 and ½ tablespoon butter
- 1 red chilli
- 2 tablespoon refined oil
- ½ cup grated cheese
- 2 tablespoon dairy whitener
- 1 and ½ teaspoon salt
- Oregano to sprinkle
Method:
- In case the chicken breast pieces are frozen thaw them by taking out from refrigerator few hours in advance
- Keep the vegetables ready –
– Chop garlic
– Wash, peel and cut the carrots into chunks
– Wash and cut bell peppers into strips
– Wash and cut the tomato into bigger wedges - Heat a pan or a wok
- Melt 1 tablespoon butter in the hot pan
- Break the red chilli and sauté the garlic in the butter
- Add oil into the pan once the garlic pieces are sautéed without switching off the flame
- Add the vegetables into the pan followed by grated cheese, dairy whitener and ½ teaspoon salt
- Place the breast pieces in the pan and mix the contents of the pan with a spatula or a turner
- Cover the pan and let the chicken pieces cook on sim
- Check after 30-45 minutes, if the chicken pieces are cooked
- Increase the flame and reduce the gravy to the consistency you desire, in case the chicken pieces are cooked
- Taste and adjust salt, once you acquire the desired consistency. I have added 1 more teaspoon salt
- Switch off the flame. Sprinkle oregano and pour ½ teaspoon butter on the curry
Thaw the chicken breast pieces.
Wash, chop & cut and keep the vegetables ready.
Melt 1 tablespoon butter.
Break the red chilli and sauté the garlic in the butter.
Add oil into the pan once the garlic pieces are sautéed
Add vegetables into the pan followed by grated cheese, dairy whitener and ½ teaspoon salt.
Place the breast pieces in the pan and cover the pan. Cook the chicken pieces for 30-45 minutes on sim.
Increase the flame and reduce the gravy to the consistency you desire, once the chicken pieces are cooked.
Taste and adjust salt.
Switch off the flame. Sprinkle oregano and pour ½ teaspoon butter on the curry.
Tips:
- Melt the butter on low flame, as butter emits smoke very quickly
- It is not mandatory to use chicken breast pieces for this recipe. You can replace chicken breast pieces with regular chicken pieces that we generally use to make chicken curry
- Ensure the gravy is not too runny. The gravy should be just enough to accompany your rice or noodles
- You can use olive oil instead of refined oil for this recipe
his is a wonderful way to prepare chicken. It took me a couple of times to adjust to the stainless steel pan yet when I did the chicken turned out great. Sometimes I throw in some mushrooms and saute them at the same time.
