Having said that, although one part of my taste-buds are not receptive of foods rich in spices, resulting in limiting my encounter with so many delicacies existing in the world. But, there is another part of my sensory organs, which is not at all ready to give up and is always pushing me to innovate and explore. This has resulted in my quest to look out for dishes and recipes beyond boundaries, beyond traditions and beyond time zones. Recipe: Olive & Cheese Stuffed Chicken Breasts
Preparation Time: Around 40 minutes Baking Time: Around 35 minutes Yield: 6 (3 Stuffed Chicken breasts cut into halves) Equipments used: Baked in OTG
Ingredients:
- 3 boneless chicken breasts cut into halves (6 pieces)
- 1 small garlic peeled and crushed
- Around 1/3 cup cheese (grated or molten)
- ¼ cup chopped black olives
- Around 2 teaspoon oregano flakes
- Around 1&1/2 tablespoon olive oil
- 1/8 cup chopped dill leaves
- 1 tablespoon butter
- Around ¼ teaspoon salt
Method:
- Set the oven at pre-heating for 20-25 minutes
- In the meantime, wash the chicken breast pieces and remove excess water with a paper towel
- Massage the chicken breast pieces with 1 tablespoon olive oil, crushed ginger and dill leaves and keep it aside
- In a bowl mix cheese, chopped olives and 1 teaspoon oregano flakes
- Take the chicken pieces and make a pocket with a knife
- Spoon the cheese mix inside the chicken pocket you made
- Take out the pre-heated oven tray from OTG and grease the tray with olive oil
- Place the chicken pieces on the tray
- Brush the chicken breast pieces with butter
- Sprinkle salt and oregano flakes
- Bake the chicken pieces at 200° Celsius for 30-35 minutes, while flipping the pieces once in between
- Check the chicken pieces with a fork. The pieces should be tender but cooked
Clean the chicken breast pieces and remove the excess water.
Massage the chicken breasts with crushed garlic, dill leaves and olive oil.
Mix cheese, chopped olives and oegano flakes.
Spoon cheese mix in chicken breast pockets.
Brush pre-heated oven tray with olive oil.
Place the chicken breast pieces on the tray and brush the pieces with butter.
Sprinkle oregano flakes and salt on the chicken pieces and put them to bake.
Tips:
- You can bake the whole breast pieces. I cut them into halves for convenience (as having a whole breast for lunch becomes too much for my kid)
- Set the timing of OTG as per the features. Some OTGs take more time some take less
- Don’t overcook the chicken breast pieces, else they will turn hard and difficult to chew
- You can replace olive oil with refined or vegetable oil
